Orange Crepes

I absolutely love crepes, they are the ultimate chick food.  This recipe is adapted  from Southern Living.  The fresh citrus flavor is amazing!  You might want to double the recipe, I always do and we still wish I had made more.

I took a batch of these to my friend to thank her for taking our family pictures.  After tasting them she told me I should open a restaraunt.

 The raspberries are my addition and this recipe could certainly be made without them and still be super yummy. 

 Look at that orange zest.  Yummy I tell you.  I hope you enjoy them.

Basic Crepe Recipe
1 C flour
1/2 t baking powder
1/4 t salt
1 1/4 C milk
1 egg
1 T melted butter

Combine first 3 ingredients in a large bowl.  In a small bowl combine milk, egg and melted butter.  Add milk mixture to dry ingredients and wisk until smooth.  Heat a small skillet on medium heat.  Pour 2 tablespoons of batter into skillet and tilt skillet and rotate in a circle until batter covers bottom of skillet.  Cook about 1 min or until the edge of the crepe starts to pull away from the pan.  Flip over and cook on the other side for about 30 seconds.  repeat with remaining batter.  Prepare orange sauce.

Orange Sauce
1/2 C firmly packed light brown sugar
1/4 C butter
1 T orange zest
1/4 C orange juice
1 T water

Combine in a heavy saucepan.  Bring to a boil over low heat.  Boil 1 minute, stirring constantly.  Pour orange sauce into skillet.  Dip crepes into mixture one at a time and turn to coat.  Fold in half and fold in half again.  Put on serving plate and sprinkle with powdered sugar.  Garnish with raspberries if desired.  Makes 12 six inch crepes.
